Egg-Free Chocolate Chip Cookies

Image
Egg-free Chocolate Chip Cookies- soft, chewy, chocolate chip cookies with no eggs required. Very easy to make- a great solution for those who can't eat eggs or when you just don't have any eggs to hand. Jump to Recipe I'm obviously a bit obsessed by eggs and baking at the moment. I recently published a round up of recipes that only need one egg and now here I am with an egg-free cookie recipe! This recipe was born out of a situation where I wanted to take cookies to a friend who had just had a baby, but I realised at the last moment that I didn't have any eggs left. This happens to me all the time, but I normally have time to nip to the shops. Not this time... I thought about egg substitutes I could use, and decided, that as eggs in a cookie mainly provide the moisture and bind the dough together, milk would work. The resulting cookies, have a very slightly different texture, are just a little bit more fragile and only go slightly golden. They hold together well, espec...

Easy Chocolate Hazelnut Cheesecake (No Bake)

Image
Chocolate Hazelnut No Bake Cheesecake- an easy-to-make, indulgent chocolate dessert, topped with hazelnuts. Perfect summer dessert. Chocolate Hazelnut Cheesecake is such a Summer dessert so, on a surprisingly, scorching hot Bank Holiday Monday, it seemed just the right dessert to make. Most of my favourite desserts are rather traditionally British and wintery. (Check out my three fruit crumble recipes for evidence! Apple Crumble, Rhubarb Crumble and Summer Fruits crumble) A big old bowl of something deliciously stodgy slathered in custard isn't really what you want after a summer BBQ though is it? Cheesecake is much more summery and if you add chocolate to it, so much the better! This recipe for Easy Chocolate Hazelnut Cheesecake is the no-bake variety of cheesecake, so no need to put the oven on in the hot weather. It has chopped hazelnuts in the base as well as sprinkled on top, so it has a slightly Nutella like taste but without the overpowering levels of sweetness. Instead, the...

Easy Chocolate Fudge Cake

Image
Easy Chocolate Fudge Cake- an easy-to-follow recipe for classic chocolate fudge cake with light sponge and thick, fudgy chocolate icing. Chocolate fudge cake is a classic indulgent cake and a popular choice is for dessert or an afternoon treat in restaurants and cafes everywhere. It's a very rich chocolate cake which is made with real chocolate rather than cocoa powder and it is filled and topped with an even richer, thick chocolate ganache. What's not to like? If I'm not sure what to order for dessert, I will usually plump for the chocolate fudge cake because it's reliably delicious. Unless you're not a chocolate lover, it's pretty hard to resist all the deep chocolate deliciousness that's involved. If you want to make a chocolate fudge cake at home, this is an easy recipe and produces a reliably good result. It has a light, almost powdery-soft sponge and the icing is thick and fudgy. There are no tricky techniques or ingredients as it's an all-in-one m...

Chocolate Chip Ginger Cake

Image
I love ginger cake. I love ginger in general, but ginger cake really is gorgeous, and dark chocolate accompanies it really well. The slightly bitter chocolate taste complements all that sticky golden syrup and sugar, add some chocolate buttercream and mmmmm, you've got yourself a winner! A little while back I made a chocolate chip ginger sandwich cake, for one of my husband's colleagues who was leaving. It went down very well, lasted about 5 seconds according to my husband, but I never remembered to take any photos. I had some time spare this weekend, so I decided to have a bit of a baking/cooking day and make it again. This chocolate chip ginger cake recipe makes a pretty foolproof sandwich cake. The ginger sponge is feather light and just slightly sticky. The only thing you need to watch out for is when you come to turn the cake out. It will stick and crack at any opportunity, so make sure that the tin is well greased and let the cake cool for several minutes before trying to...

Easter Chocolate Fridge Cake

Image
Easter Chocolate Fridge Cake- A recipe for an indulgent chocolate Easter treat packed with fruit, nuts and most importantly, Cadbury's Mini-Eggs! With Easter around the corner, I was tempted to make this Easter Chocolate Fridge Cake, or Chocolate Tiffin. There's no pretending that it's anything but a very indulgent treat, but as Easter is the celebration that seems to involve the most chocolate, I think that's okay! Cadbury's Mini Eggs are my absolute favourite Easter goodie, so I added plenty of them to this recipe. If you're more of a Cadbury's Creme Egg fan, you could use the mini ones of those instead. I like those too, but couldn't be faffed with unwrapping them all individually! Chocolate tiffin usually has biscuit inside, but my Easter version doesn't. I used nuts for the crunch instead- almonds and hazelnuts (which are my favourites at the moment), but if nuts are a problem, you could switch them for the more traditional digestive biscuits or...

Easter Nest Cupcakes

Image
Easter Nest Cupcakes- classic sponge cupcakes with chocolate topping and Easter Nest decoration using cadbury's Mini Eggs and crumbled Cadbury's Flake. There are so many cute cupcake ideas to make for Easter, but when you don't have a lot of time, or you want to bake with your children, I find simple is best. I made these Easter Nest cupcakes as a variation on my Chocolate Orange Easter Nest Cake . The sponge I use is a classic yellow sponge that makes an excellent base for any cupcake you want to make. It turns out well every time; moist, buttery and delicious. Top that with real chocolate icing, crumbly Cadbury's Flake and the essential Cadbury's Mini Eggs and you've got yourself a classic Easter treat. They don't tend to last long once people try them- the 16 that I made for work lasted until 1pm!

Hazelnut Brownies

Image
It was half-term this week and, after a couple of days of enjoying my freedom and visiting family and seeing friends, I got the baking itch. I wanted to make something that would serve as dessert and as an afternoon treat to have with a cuppa. Brownies fit the bill perfectly! I had a packet of crushed hazelnuts in my baking cupboard that I had been hoping to use for something, and brownies seemed to fit for that too. Chocolate and nuts is never a bad idea, so I threw them in with the mixture to add some extra texture. My husband is not a fan of nuts in any form, so I ended up doubling the mixture and only putting hazlenuts in half. We were going away for a few days to Canterbury for our anniversary, so I packaged them up to take with us. I thought it might save some pennies if we had our own treats instead of buying cafe treats everyday. Unfortunately, even though we packed very light, there still wasn't room for an enormous tupperware of hazelnut brownies so, at the last minute I ...

Valentine's Choc-Chip Shortbread Biscuits

Image
Valentine's Day Chocolate Chip Shortbread Biscuits- heart-shaped shortbread biscuits, filled with chocolate chips and covered in melted chocolate. Valentine's Day is just around the corner, so get ready to see hearts and flowers everywhere (if you haven't already!) This year, I am doing a Valentine's Day collaborative post with Danielle from Welcome 2 My Jungle with a focus on Valentine's baking for kids. One of the easiest baking ideas to do with children is shortbread. It's very simple, only has 3 main ingedients, lends itself to small hands joining in and always turns out well. More importantly, shortbread is buttery and delicious! All the best biscuits come from the UK, in my totally unbiased opinion, and shortbread is number one. For this Valentine's version of shortbread biscuits, I added chocolate chips and then dipped the tops of the biscuits in dark chocolate. I finished them off with pink and white sprinkles because, for kids, sprinkles are essent...

Oaty Double Chocolate Loafcake

Image
I had a bit of a dilemma when I was designing this recipe. I wanted to make a double chocolate loaf cake BUT... it's January. I'm trying to be healthier, most people are. Is it really a good time to be posting double chocolate cake?! So, I fiddled about with the recipe to try and make it a bit less indulgent and was really pleased with the result when I added porridge oats. The oats in this cake made it a denser, more filling cake, so a single slice is all you need. You still get a delicious chocolate hit from the cocoa and the chocolate chips too! Everything's automatically healthy if it has oats in. I'm pretty sure that's the rule... I had a slice with a cup of tea, whereas my husband really enjoyed a big thick slice with hot custard (slightly undoing my attempt to up the healthiness of the recipe!) I think it would make a great after school treat. A slice could probably be split between two children and easily keep them going until teatime!

Choc-Chip Panettone Bread and Butter Pudding

Image
Choc-Chip Panettone Bread and Butter Pudding- the best way to use up leftover over Panettone is to make this twist on the traditional British dessert. Use Panettone instead of bread and add chocolate chips for a creamy, comforting winter dessert. Did you get a Panettone as a gift this year? It's a pretty popular gift these days at Christmas, but until a couple of years ago, I had never really come across one, never mind eaten one. This sweet, enriched bread, full of dried fruit, has been made in Italy since the middle ages and has grown in popularity throughout Europe in recent years. Did you know that Panettone are hung upside down when baked, so that their dome shape doesn't get cracked and spoilt? No- me either! To enjoy Panettone traditionally, you slice it like a cake and serve with butter and/or jam to spread on top and have with coffee. Alternatively, you can tilt it sideways and slice circles from the end so that they will fit in the toaster. Apparently, it's amazin...

Real Hot Chocolate

Image
Real Hot Chocolate- very simple to make with double cream, milk and real chocolate. A creamy and delicious winter treat, much nicer than packet mixes. When I think of cosy winters, sitting snuggled under a blanket on the sofa watching Christmas films, I also think of hot chocolate. There's just no other drink that adds to the cosiness like hot chocolate. Don't get me wrong, I live for tea, especially on a work day. I do believe it solves most problems and I power through the day on 3-4 cups. But, because I drink it most of the time, it just doesn't have that cosy factor. It's just not indulgent enough. Only hot chocolate fits the bill! You can get some pretty decent hot chocolate in some of the coffee shops these days and you can buy the packet mixes for home, but nothing beats real hot chocolate. It has a much deeper, creamier flavour (probably due to all the chocolate and the cream...) Making your own hot chocolate is very easy and totally worth the small amount of ef...

Chocolate Sandwich Cake with Whipped Cream Filling

Image
Chocolate Sandwich Cake with Whipped Cream Filling- a Victoria Sponge style cake with a chocolate sponge and slightly sweetened whipped cream filling. At the weekend, I made a chocolate sandwich cake. It's one of those soft, fluffy cakes that's so light it melts in your mouth. Essentially, it's a chocolate version of a Victoria Sponge! This type of cake is the perfect cake to whip up quickly when you've got visitors coming round. There's no fuss, no fancy techniques, no icing to pipe, and it's sure to be a winner with anyone you give it to. I normally say that you can make cakes by hand just as well as you can with a fancy mixer or a hand mixer, but Victoria Sponge style cakes are where the gadgets come into their own. If you have one, you can incorporate a lot more air into the sponge and really get that light texture. I prefer to make Chocolate Sandwich Cake with a sweetened whipped cream filling, but if cream's not your thing, you could make a chocolate ...

Mocha Cupcakes

Image
Mocha cupcakes- cupcakes with a light mocha sponge and chocolate icing on top. Perfect for afternoon tea or parties. It's that time of year again at work (parents' evening) where I try to do my bit and provide cake for all the teachers doing a 12-13 hour day. It's amazing how much a little bit of cake can cheer you up when you're exhausted and feel like you've talked the hind leg off a donkey! So far, over the years, I have made blueberry doughnut muffins, lime and coconut cupcakes , chocolate brownie cupcakes and lemon drizzle cupcakes . I spent a while pondering what flavours to do this time and finally settled on Mocha cupcakes. I'm a bit of a funny fish with coffee things. I don't really like coffee as a drink. I would choose tea every time, given the chance! An occasional latte is about my limit. However, when it comes to coffee flavoured things, I'm straight in there! Coffee truffles, coffee ice cream, coffee cake- all winners for me. Part of lov...

Warm Chocolate Orange Brownie Dessert

Image
Today's post is a dessert recipe for Warm Chocolate Orange Brownie Dessert. I don't often make dessert when we have guests, mainly because I don't feel that inspired about what to make. Don't get me wrong, I love a dessert. It's just that I would always choose a starter over a dessert given the option! If I am having dessert, I often choose some kind of molten chocolate thing, or a chocolate brownie concoction. All that squidgy, delicious chocolatey goodness, topped off with some ice-cream, is right up my street! So, today, I thought I would give this idea a try with chocolate orange flavours. The essence of a good warm brownie dessert is in the previously mentioned squidginess. To get that, you need lots of moisture- melted butter, melted chocolate and eggs are usually the combo that will get you there. Add orange curd to that and you got chocolate orange yumminess! Timing is pretty important with this Warm Brownie Dessert; you want it to be just a little runny at ...

Chocolate Chip Pumpkin Cake

Image
Chocolate Chip Pumpkin Cake- a moist pumpkin sponge with chocolate chips and sandwiched together with caramel icing. Perfect for a Halloween treat! I have made some really nice pumpkin cupcakes with chocolate icing in the past, so I thought perhaps a full-sized pumpkin layer cake might work, with similar flavours. Pumpkin puree is so readily available in UK supermarkets now, it's much easier to make pumpkin treats here than it used to be. This Chocolate Chip Pumpkin Cake is made of two layers of moist pumpkin sponge dotted with dark chocolate chips and a very indulgent caramel filling. It is one of the most delicious cakes I have ever made, if I do say so myself! It would be perfect for Thanksgiving dessert, a Halloween party, or as an alternative Christmas treat. The caramel icing between the pumpkin cake layers is quite sweet, so I only use a very thin layer of it. You could swap it for a chocolate buttercream or perhaps some whipped cream. That would tone down the sweetness if ...

Chocolate Chip Cupcakes with Marshmallow Icing

Image
I made these chocolate chip cupcakes with marshmallow icing last weekend. The original plan was to try and use the marshmallow icing to create a ghost shape and then use black icing or chocolate chips for the eyes, ready for Halloween. It would have worked beautifully, if I had used the biggest circle icing nozzle but I used the next size down which didn't make large enough swirls. Oh well, they weren't ghosts but they were pretty delicious! Marshmallow icing, if you have never had it, is essentially a buttercream with melted marshmallow added to it. When it is set, it's soft and pliable. You need quite a good grip to pipe it, but it holds the shape that you pipe, beautifully. Biting into it is like eating a marshmallow but with a thicker texture. It tastes delicious! I can imagine it would be beautiful on top of dark chocolate cakes too. The cupcakes in their accidental form would be great for kids parties. Chocolate chip cake is always a crowd pleaser and it's very si...

Chocolate Brioche Twist

Image
Chocolate Brioche Twist- a classic brioche dough twisted with milk chocolate and baked. Perfect as an Easter breakfast treat. This week, for the #GBBOTwitterBakeAlong, I have made a Chocolate Brioche Twist. My heart sank a little when I saw the challenges in last week's GBBO. I love watching Bread Week and I love making bread in my breadmaker but I have little to no experience of any kind of fancy breadmaking. So when I saw twists and sweet dough and showstoppers using 3 different types of flour, I wasn't sure how I would get on with trying something similar out for myself. I decided to make a Chocolate Brioche Twist as it didn't seem too scary or complicated and I was very pleased with how it turned out. It's absolutely delicious for one thing, and it looks pretty impressive when it's baked. Brioche is made of an enriched dough using eggs, sugar and butter which gives it a slightly more cakey, buttery texture. As you'd expect from the name, it's French, bu...

Chocolate Orange Drizzle Cake

Image
This week I have made a Chocolate Orange Drizzle Cake in honour of the Great British Bake Off and as part of the #GBBOTwitterBakeAlong. The new series started this week with a whole set of new bakers and new challenges for us baking addicts to soak up. The first episode had the bakers taking on drizzle cakes, jaffa cakes and mirror cakes. I was pleased to see that they were going back to some basics that we might at least have heard of! One of the things that I love about Bake Off is how it manages to have me on the edge of my seat gasping about buttercream disasters and unrisen cakes, and there was plenty of that in the first episode! Given the choice of the three rounds from week 1, I decided against making a mirror cake (too scary) and thought I would combine the other two rounds of drizzle cake and jaffa cakes into one. So I made a Chocolate Orange Drizzle cake. It's a moist chocolate orange cake with orange curd running through it and orange sugar drizzle poured over the top...
