Hot Cross Bun Cupcakes

Image
Hot Cross Bun Cupcakes- all the flavour of a traditional hot cross bun in a cupcake- cinnamon, ginger, mixed spice and raisins. Easy to make treats for Easter. How much do you love Hot Cross Buns? They're a real seasonal treat (although seasonal for Easter seems to start straight after Christmas now!) There are so many varieties these days, chocolate, apple, ginger etc. I love the apple ones personally, if I'm veering from the traditional. So, I thought, why not add Hot Cross Bun Cupcakes to the mix? My Hot Cross Bun Cupcakes have all the spice and flavour of a hot cross bun, but with a cake base. They have a plain cupcake base with the hot cross bun spices and raisins added. The spices make the cake taste almost as though it's been made with wholemeal flour. I tend to go heavier on the cinnamon than the other spices, because I love that flavour more than the others, but you can play with the balance of spices however you prefer. So if you've had enough of all the Easte...

Easter Chocolate Fridge Cake

Image
Easter Chocolate Fridge Cake- A recipe for an indulgent chocolate Easter treat packed with fruit, nuts and most importantly, Cadbury's Mini-Eggs! With Easter around the corner, I was tempted to make this Easter Chocolate Fridge Cake, or Chocolate Tiffin. There's no pretending that it's anything but a very indulgent treat, but as Easter is the celebration that seems to involve the most chocolate, I think that's okay! Cadbury's Mini Eggs are my absolute favourite Easter goodie, so I added plenty of them to this recipe. If you're more of a Cadbury's Creme Egg fan, you could use the mini ones of those instead. I like those too, but couldn't be faffed with unwrapping them all individually! Chocolate tiffin usually has biscuit inside, but my Easter version doesn't. I used nuts for the crunch instead- almonds and hazelnuts (which are my favourites at the moment), but if nuts are a problem, you could switch them for the more traditional digestive biscuits or...

Easter Nest Cupcakes

Image
Easter Nest Cupcakes- classic sponge cupcakes with chocolate topping and Easter Nest decoration using cadbury's Mini Eggs and crumbled Cadbury's Flake. There are so many cute cupcake ideas to make for Easter, but when you don't have a lot of time, or you want to bake with your children, I find simple is best. I made these Easter Nest cupcakes as a variation on my Chocolate Orange Easter Nest Cake . The sponge I use is a classic yellow sponge that makes an excellent base for any cupcake you want to make. It turns out well every time; moist, buttery and delicious. Top that with real chocolate icing, crumbly Cadbury's Flake and the essential Cadbury's Mini Eggs and you've got yourself a classic Easter treat. They don't tend to last long once people try them- the 16 that I made for work lasted until 1pm!

Breadmaker Hot Cross Bun Loaf

Image
Breadmaker Hot Cross Bun Loaf- if you love hot cross buns, this sliced loaf version is for you. Make this spiced fruity loaf in the breadmaker and enjoy toasted with lots of butter. Perfect for Easter breakfast. I am a big fan of hot cross buns, so when I saw that Marks and Spencers had a sliced, hot cross bun loaf on the shelves, I bought one straight away. It was perfect- just the thing for an afternoon snack. It got me thinking- I'm pretty sure I could make a hot cross bun loaf myself. Even better, I could make one in the breadmaker! Generally, I don't like anything with a lot of mixed, dried fruit in it. Christmas cake- ugh! Traditional wedding cake- no thank you. But hot cross buns, I love! I don't mind that they appear in the shops the second that Christmas is over. So much the better! The very idea of a hot cross bun loaf is brilliant. Pop slices in the toaster without any danger of them getting stuck, burnt and mangled and you get a lot more out of one loaf than you...

Chocolate Brioche Twist

Image
Chocolate Brioche Twist- a classic brioche dough twisted with milk chocolate and baked. Perfect as an Easter breakfast treat. This week, for the #GBBOTwitterBakeAlong, I have made a Chocolate Brioche Twist. My heart sank a little when I saw the challenges in last week's GBBO. I love watching Bread Week and I love making bread in my breadmaker but I have little to no experience of any kind of fancy breadmaking. So when I saw twists and sweet dough and showstoppers using 3 different types of flour, I wasn't sure how I would get on with trying something similar out for myself. I decided to make a Chocolate Brioche Twist as it didn't seem too scary or complicated and I was very pleased with how it turned out. It's absolutely delicious for one thing, and it looks pretty impressive when it's baked. Brioche is made of an enriched dough using eggs, sugar and butter which gives it a slightly more cakey, buttery texture. As you'd expect from the name, it's French, bu...

Chocolate Orange Easter Nest Cake

Image
Chocolate Orange Easter Nest Cake- a light yellow sponge cake filled with orange curd and covered in chocolate icing with Easter decoration on top. Cadbury's Flake and Cadbury's Mini Eggs are used for the cake decoration. Perfect to serve on Easter Sunday. Jump to recipe When Easter's coming up, the thing that gets me in the Easter mood is definitely Cadbury's mini Eggs. They are the perfect treat. Crack the shell with your teeth and crunch the pieces and then let the chocolate melt in your mouth- yum! I like them far more than Creme Eggs, which although nice, are sickly sweet and you have to eat the whole thing. I have vivid memories of my mum bringing home those little Cadbury Easter Nest cakes, that had vertical lines of buttercream inside and one Mini Egg on top and us eating them as an after-school treat. With that in mind, I have been determined all week to make a big Easter Nest Cake with Mini Eggs, and I really wanted it to be chocolate orange. My search for or...
