Slow Cooker Jerk Chicken

Slow Cooker Jerk Chicken- an easy slow cooker version of the classic Jamaican marinated chicken. Packed full of flavour and delicious served with coconut rice. Jump to Recipe I LOVE Jerk chicken. Love it. I quite often make it as a traybake dish with sweet potatoes and peppers. But, what could be better than coming home, walking in the door and smelling jerk chicken almost ready to serve? That's the joy of this slow cooker recipe- just throw it all in and leave to cook. It has all the traditional jerk herbs and spices, that make that spicy, zesty marinade work so well. I like to use chicken breasts so that, once the chicken is cooked, you can shred it easily through the remaining sauce and use it in a variety of ways- with coconut rice, in sandwiches, over jacket potato and so on. Lazy Breakfast Traybake- an easy way to serve up an English cooked breakfast using one baking tray- sausages, potatoes, bacon, mushrooms and tomatoes. Jump to Recipe I love an English breakfast, especially at the weekend, even better if you're eating it at big family gathering. What I don't love, is all the pots and pans that need cleaning afterwards. The worst, the absolute worst, is the grill. I absolutely hate cleaning it. This lazy breakfast traybake is a winner on that front. One baking tray and you're done! Sausages (Cumberland are best by far), bacon, mushrooms, tomatoes and Cajun spiced potatoes- amazing. I like to think of the breakfast traybake as a base breakfast. Something you can build on. I will happily eat it for breakfast and not need anything else. But, if you can't imagine a cooked breakfast without beans or eggs or toast, you can easily serve those on the side as well for a really monster breakfast/brunch. It's pretty quick to make with grilled sausages in a tomato- based sauce and a bit of spice from the crushed chillis. It's easy to make and can be doubled to feed a crowd, if needed.

Aubergine and Potato Curry- a spicy, tomato-based, vegan curry with aubergine, peppers and potato, very low in calories and syn free on Slimming World. It's my mission to find as many different ways to use aubergine as possible. Pretty much anything tastes better with aubergine in it, in my opinion! My other Aubergine recipes Warm Mediterranean Couscous salad with Roasted Aubergine and Feta Mediterranean Pasta Bake We are still going strong with our attempt to do a full year of Meat Free Mondays and aubergine has been a key ingredient for getting us as far as September successfully. This recipe for Aubergine and Potato Curry, is up there with my favourite spicy meals. It's absolutely packed with flavour and deliciously spicy. Of course, if you're more of a mild spice fan, just adjust the heat of the chilli powder and/or reduce the amount of fresh chilli that you use.

Smoked Paprika Roasted New Potatoes- the perfect way to jazz up your next dinner. Crispy, golden, roasted new potatoes with a kick of smoked paprika. I made a big batch of my Very Garlicky Slow Cooker Lemon and Rosemary Chicken this week and was looking for something different to serve with it. I tend to stick to the same old potatoes and veg side dishes with dinner, especially during the week, and I just get very bored of them. I had new potatoes in the cupboard- the perfect summery accompaniment, but I wanted to add more flavour. The smoked paprika roasted new potatoes that I ended up making were just perfect; crispy on the outside and gorgeously fluffy on the inside, with a bang of flavour from the smoked paprika and the chilli. The best thing is that they are very easy to make, with just 5 basic ingredients and virtually no prep, so you could easily do them on weeknights to jazz up any meal. If you love easy dishes that you just throw on a baking tray- these are for you!

A delicious dinner for the kids and healthier than shop-bought versions. The recipe I am going to tempt you with today is Crusted Cod Bites with Garlic and Rosemary New Potatoes. A lovely summer meal that requires only a small amount of prep. I love fish, really love it. I will happily eat any fish put in front of me. I even still love fish fingers. I have fond memories of sitting in my nana's back garden in Cumbria, in a den she had made out of sun loungers and a picnic blanket, eating fish finger sandwiches with my sister. Happy times! Low syn on Slimming World and 217 calories. Jump to recipe This week I have been making vegetable curry in my slow cooker. I love everything about having a curry- all the trimmings that are involved. Naan bread in particular is a hot favourite for me. I would rather have curry and Naan than have curry and rice. If you like a really fiery curry, often a vegetable curry is the way to go. The veg absorbs a lot of the heat from the spices and really packs a punch! The advantage of using the slow cooker (apart from the usual bonus of leaving it to do its thing) is that it keeps the curry lower in calories because no curry paste or oil is needed. Slow Cooker Lamb Madras- a spicy slow cooked lamb curry, less than 200 calories. A great alternative to a takeaway and syn-free on Slimming World. Jump to recipe You just can't have enough curry recipes in my opinion, especially slow cooker ones. They help to get the absolute best out of those cheap cuts of meat which absorb all the delicious spices. So with that in mind, I was inspired by a pack of diced lamb that I got on special offer, to do a slow cooked lamb madras. Madras comes in many styles and originates from South India. The name madras for the curry however, is a British invention, like most of the curry names that we know and love. Madras is a red curry with plenty of chilli used to make it hot. It usually has a sour element included such as lime juice or vinegar, and sometimes will have yoghurt added to cool the heat. Spicy Maple Chicken

We visited family in Canada earlier this year; beautiful place, lovely people. At the end of our holiday, I carefully transported some genuine Canadian maple syrup back in my suitcase, wrapped in ziplock bags and a layer of socks! it was the good stuff, A-grade, and tasted absolutely a world away from the nasty slop from the bottom of the barrel that they export to Europe. Wise people, keeping the good stuff for themselves! The bottle's half-empty now, and I know I won't be able to go back to the low-grade syrup that we used to buy. So, in celebration of of the delicious maple syrup we have left, I used some to make a sweet and spicy marinade for chicken, and served up this Spicy Maple Chicken with rice. It was quick and delicious and the sharp spice of the cayenne pepper was a good contrast to the sweetness of the maple syrup. Sweet Chilli Salmon Fillets

This week I made some salmon fillets marinated in a beautifully simple sweet chilli sauce. I got the salmon fillets out for dinner because I had discovered that I seem to have built up a stockpile of salmon fillets in my freezer this month! This prompted me to go for a total reorganisation of my freezer. I absolutely hate food waste and I didn't want to find anything with freezer burn, or beyond the 3 month rule in a few weeks time. I decided to just get everything out and see what was what. Note to self- stop putting things in the freezer with the semi-clear plastic bags still wrapped round them, because you can't see what's in there! There was only one thing that needed throwing away; some tortilla wraps that were past their best.

And so easy to make too. I love them- traditional scones, fruit scones, cheese scones, all the scones! Cheese scones are possibly my favourite type of scone. I like them so much because they are versatile; they work for breakfast, a snack or afternoon tea and all you need to have handy is a knife and some butter. I made some mini cheese scones for my nephew's first birthday party recently and they went down very well with the parents and the children. This time I wanted a bit more kick with the cheese. Marinated Pork Tenderloin

The recipe I'm sharing today is a beautiful, spicy, marinated pork tenderloin dish, perfect for a weeknight dinner or an alternative Sunday roast. I had never eaten pork tenderloin until two years ago when my parents started raving about it. My dad kept telling me how he had got these pork fillets for amazing prices at Asda and how they were delicious roasted. I decided to try it, and he's right, it is delicious roasted! Pork tenderloin is a very lean meat and it marinates very well, especially if you slice it up into thick slices, so it can really soak up the flavours. I used a combination of chilli, honey, lemon, garlic, ginger and coriander. You can easily adjust the quantities to suit your own preferences, so add more chilli if you like a kick, add more honey if you like it sweet. If you are doing things last minute then you can leave the meat in the marinade for 20 mins and get away with it. Ideally though, 3-4 hours would let the flavours really get going. A recipe for Giant Cous Cous was one of the first I published here. I still cook with it regularly, especially in the summer. It's great for lunches. This spicy recipe is one I made for my husband when he started Slimming World. He was finding it hard to be inspired at lunchtime, when he was so used to having sandwiches. I tend to cook extra at dinnertime so there's leftovers for lunch, but on this occasion, there wasn't! It's delicious hot, but it's fine to have cold the next day too. He had it just as it is, but you could add some grilled salmon or left over cooked chicken to make it a bit more substantial. If you prefer it even spicier, then add a teaspoon of chilli powder as well. To make this Slimming World friendly and syn free, use powdered harissa and spray oil.

No getting in from work and thinking what shall I have for dinner, I can't be bothered to cook, let's get take-away! It all needs to be thought of in advance. So, it was a bit awkward last week when we were just getting started and I found myself without any planned dinner. It needed to be quick and fit in with Slimming World for my husband's diet. And so the Cajun Chicken and Bacon tray bake was born! I love a tray bake dinner. It's so easy- chop it all up, throw it on a baking tray and hey presto! You need 2 baking trays for this recipe as the key to getting it cooked quickly is space between the different food on the tray. Curry is probably my favourite takeaway. It's not just the curry and rice, it's all the delicious bits that go with it. Mmmm naan bread! Saag Aloo! Poppadoms! Mango Chutney! Samosa! Bhaji! The problem is wanting to have a bit of everything, but not being able to fit it all in. There's a talent in clever ordering. It's very easy to make a half-decent curry at home. There's a bit more talent required to make a really amazing one. One of my colleagues at work makes spectacular curries and delicious little morsels of Asian goodness as well. I am nowhere near up to that mark! Getting it right is all about the combination of spices. Slow cooking a curry means that you can use cheap cuts of meat and you can leave it cooking without standing over it. Below is my slow cooker beef curry, which freezes well and is full of delicious smells to come home to! I use beef rib trim, which can be hard to get. Simple Spicy Chicken Pasta

Every Sunday, my husband and I look through the following week's plans to see how many nights we need a quick dinner due to late meetings and things like that. We usually have a few slow cooker meals ready in the freezer, but it's handy to have a bank of quick-to-make dinners too. A favourite quick dinner of ours is Spicy Chicken Pasta. It only has a few ingredients and is great for using up left over chicken. If I get in late, it's great to be able to walk into the kitchen and knock something tasty like this up, in about 20 minutes. It's essentially a tomato, garlic and onion-based pasta sauce, with a good hit of chilli and some red pepper thrown in too. It has a lot of flavour and can be thrown together very quickly. It's a great way to use up left over roast chicken too, if you have any. If you're doing Slimming World, switch the oil for a low cal oil spray and switch the harissa paste for powder to keep it "syn" free.
