Glazed Raspberry and Lemon Muffins- These muffins are simple to make, dotted with fresh raspberries, flavoured with real lemon and glazed with a lemon glaze. A delicious breakfast treat or perfect for your next picnic! Jump to Recipe I'm a big fan of raspberries. I love their sweet, sharp zing and I'll happily sit and eat a whole punnet of them! Occasionally though, I'll have some leftover that start to go a little bit soggy. These muffins are the absolute best way to make sure those raspberries don't go to waste. The muffins are beautifully moist and have the fresh raspberries going through them, additional zing from lemon zest and a lovely lemon sugar glaze on the top. Lazy Breakfast Traybake- an easy way to serve up an English cooked breakfast using one baking tray- sausages, potatoes, bacon, mushrooms and tomatoes. Jump to Recipe I love an English breakfast, especially at the weekend, even better if you're eating it at big family gathering. What I don't love, is all the pots and pans that need cleaning afterwards. The worst, the absolute worst, is the grill. I absolutely hate cleaning it. This lazy breakfast traybake is a winner on that front. One baking tray and you're done! Sausages (Cumberland are best by far), bacon, mushrooms, tomatoes and Cajun spiced potatoes- amazing. I like to think of the breakfast traybake as a base breakfast. Something you can build on. I will happily eat it for breakfast and not need anything else. But, if you can't imagine a cooked breakfast without beans or eggs or toast, you can easily serve those on the side as well for a really monster breakfast/brunch. Bruschetta Brunch Crumpets- an easy brunch recipe for summer, using some classic bruschetta flavours, and it takes less than 10 minutes to make. Now that's a quick meal! Jump to Recipe I don't often get the chance to have brunch but it's always a treat. That perfect mix of breakfast and lunch foods- yum. This is such an easy brunch recipe, but it looks just a little but fancy, as though you've made lots of effort. So, if you serve it up to others they should be impressed! To make Bruschetta Brunch Crumpets, you simply toast your crumpets, spread a good layer of cream cheese on them, top with cherry tomatoes and red onion and finally drizzle with some pesto. See- such an easy recipe! Serve it with some fruit and you've got brunch in just a few minutes. It's so quick that you can decide to make it on a whim, no need to plan ahead. If you want it to be truly vegetarian, you'll need to get a special pesto as most are not vegetarian due to the parmesan content.

It was borne out of this blog post by Martyn Reah- #teacher5aday which was a call to action to teachers to take better care of themselves and each other, so that they don't burn out, give up the job that they love and contribute to a predicted recruitment crisis. Sadly, the crisis is upon us 18 months later, so it's more important than ever that we look after each other. And so easy to make too. I love them- traditional scones, fruit scones, cheese scones, all the scones! Cheese scones are possibly my favourite type of scone. I like them so much because they are versatile; they work for breakfast, a snack or afternoon tea and all you need to have handy is a knife and some butter. I made some mini cheese scones for my nephew's first birthday party recently and they went down very well with the parents and the children. This time I wanted a bit more kick with the cheese. Blueberry Duffins- soft, doughnut-style muffins laced with fresh blueberries. Delicious as a breakfast treat or with a cup of tea. Jump to recipe When I go out for a cuppa with friends, I always veer towards something chocolatey or cinnamony to go with it. Chocolate muffin, thumbs up, cinnamon swirl, I'm in. I hardly ever choose a blueberry muffin, but I don't know why as they are completely delicious! I made Blueberry doughnut muffins as the alternative option to lime and coconut cupcakes (recipe Lime and Coconut Cupcakes ) for colleagues last week. The blueberry ones disappeared very quickly, with only one coming home with me! I made them with lots of fresh blueberries. I'm sure that means that you could eat them for breakfast... fruit, yes? I would definitely make them again. The recipe is an easy adaptation of my strawberry duffin recipe.

Very Chocolatey American Style Pancakes- American style pancakes with added cocoa powder and chocolate chips to make them extra chocolatey. Perfect for dessert with whipped cream or ice-cream on Pancake day! Pancake Day is just around the corner! We are going for American style pancakes again this year for two reasons. The main reason is convenience. They are easy to make in big batches and then freeze, so you can whip them out the night before you need them and away you go. Also, I have just grown to prefer them. They are more substantial and a bit firmer, less floppy, than traditional British pancakes. Last time, I made banana pancakes which were really nice and were good for breakfast or dessert.
