Marinated Pork Tenderloin

The recipe I'm sharing today is a beautiful, spicy, marinated pork tenderloin dish, perfect for a weeknight dinner or an alternative Sunday roast. I had never eaten pork tenderloin until two years ago when my parents started raving about it. My dad kept telling me how he had got these pork fillets for amazing prices at Asda and how they were delicious roasted. I decided to try it, and he's right, it is delicious roasted! Pork tenderloin is a very lean meat and it marinates very well, especially if you slice it up into thick slices, so it can really soak up the flavours. I used a combination of chilli, honey, lemon, garlic, ginger and coriander. You can easily adjust the quantities to suit your own preferences, so add more chilli if you like a kick, add more honey if you like it sweet. If you are doing things last minute then you can leave the meat in the marinade for 20 mins and get away with it. Ideally though, 3-4 hours would let the flavours really get going. Not everyone likes chocolate cake. I know, those people are just weird! Only teasing, my Dad is one of them. So, whenever I am baking for a crowd, I always try to have an alternative for the 'no-chocolate' folks, and lemon is my go-to flavour. I made a lemon and lime drizzle cake for my Dad's 70th, which he loved, but for my husband's birthday tea, I wanted to go really lemony with these 'Very Lemony Cupcakes'. 'Very Lemony Cupcakes' have lemon zest, lemon drizzle and lemon curd all happening in one cupcake, and they are just little bundles of citrus deliciousness. If you don't like lemon, you won't get on with these! When making citrus cakes, I always used to do battle with the finest side of a grater for zesting fruit, and quite a battle it was! This weekend was supposed to be my husband's birthday lunch at a local restaurant. After all the organising to get everyone in one place at one time, at the last moment we realised it was the local regatta. Chances of finding a parking space for the booking we had made, were very slim, so on Saturday we cancelled and I started a bake/cook-a-thon to make lunch for everyone at home! I made home-made bread rolls with various fillings, lemon cakes , chocolate cheesecake brownies , home-made houmous , and potato salad with bacon. Sweet, Smoked Paprika Chicken

Do you go through phases of being totally uninspired by what to make for dinner? I do every now and again, and last week was one of those times. I was stood in front of the meat cabinet in the supermarket for ages just staring- beef, pork, bacon, chicken, turkey... I briefly turned round and looked at the fish, and then back to the meat. No ideas and I didn't fancy anything we usually make. In desperation I bought chicken breasts, thinking- there's always something you can do with chicken breasts! At home I then stood staring into the cupboard, hoping for inspiration, an unopened bottle of smoked paprika caught my eye. My Dad loves smoked paprika, but I haven't really ever used it. The idea of BBQ flavours seemed a good one, so I thought honey would work as the sweet to match the smoky flavour of the paprika. It specialises in different pasta dishes and serves them up with a free salad or soup and garlic bread. Delicious! One dish that we had there was a garlic linguine with chicken. I really enjoyed it- there was a real kick of garlic in the linguine. At the time, I said straight away that I was going to try and make something similar at home. Once it's been shredded it can be served hot: with gravy and mash, mixed with cream cheese or a tomato sauce and pasta, or mixed with mayo and served in a jacket potato.
