Slow Cooker Smoky Cauliflower Cheese Soup

Image
Slow Cooker Smoky Cauliflower Cheese Soup- Cauliflower soup made in the slow cooker with smoked cheese and Dijon mustard. A delicious winter lunch option. Jump to Recipe I have tended to avoid cauliflower in the past, because I find it a bit of a bland vegetable. The only way I really enjoyed it was when it's slathered in cheese sauce on the side of a roast dinner! So, I thought, why not make a cauliflower cheese soup? It was still a little on the dull side until I used smoked cheese and then, and here's the magic, Dijon mustard. I can't tell you what a huge difference the zing of the Dijon makes. It transforms the whole soup from meh to wow. Gorgeous.

Most Popular Recipes of 2017

Happy New Year! Hope 2017 has treated you well.   I have been rootling through my blog statistics for the year, to see what 2017's top ten most popular recipes are. Much like last year, slow cooker recipes feature heavily. Read on to see which recipes made the list, along with some 2017 blog stats. 1. Slow Cooker Leek and Potato Soup Also last year's most popular recipe, it's easy to make and very comforting in winter. My slow cooker leek and potato soup recipe is also the most-visited recipe on the blog ever. 2. Slow Cooker Beef Bourguignon This one was also very popular in 2016, but has maintained its popularity consistently over this year. Another winter warmer for your collection. 3. Mini Cheese and Onion Quiches This was a new recipe for 2017 and was popular right from the start. Perfect for buffets and parties, they are little parcels of cheesy deliciousness. 4. Slow Cooker Spanish Chicken This was one of my first recipes and is a bit of a personal favourite. As a bon...

Slow Cooker Broccoli Cheese Soup

Slow Cooker Broccoli Cheese Soup- a slow cooker version of the classic soup recipe, that makes a warm and comforting lunch. It also freezes beautifully. Syn-free on Slimming World and under 300 calories. Jump to recipe Today, I'm sharing a recipe for one of my childhood favourites, broccoli cheese soup. It's the only soup I remember my mum making on a regular basis- enormous saucepans full of broccoli boiling away on the hob with cheddar cheese stirred through. As you know, I am a big fan of making soup in the slow cooker, so I don't have to stand over it, or even check on it regularly. In fact, I can even confidently go out leaving something cooking, which I would never do with a pan on the hob. Broccoli cheese soup works beautifully in the slow cooker. Broccoli, carrot and onion are pretty standard in a broccoli cheese soup, but I also use potato to add some creamy thickness. Many recipes will ask you to make a traditional cheese sauce to add to the soup, but my feelin...

Slow Cooker Carrot and Coriander Soup

Image
Well, we're back to school after the long summer holiday and that means I have to start thinking in advance about what I want for lunch. No more deciding on a whim, no more choosing what I fancy at the time, no more lazy mornings with no lunch prep. I actually don't like getting my lunch ready in the morning, I find it strange thinking about lunch while I eat my breakfast! Soup is my go-to lunch, especially for the Autumn and Winter. You can make it in big batches, it freezes well and you don't have to put much thought into it. This recipe is for Slow Cooker Carrot and Coriander Soup. Carrot and coriander is a classic flavour combination that works beautifully; the sweetness of the carrot and the spice of the coriander are perfect. It's full of veggie flavour and goodness with the bonus of not having to stand over it while it cooks. Thank you, slow cooker! I added an orange pepper for additional veg and some potato to bulk it out and make it go further. This recipe make...

Slow Cooker Smoky Butternut Squash and Pepper Soup

Image
Slow Cooker Smoky Butternut Squash and Pepper Soup- an easy slow cooker soup spiced with smoked paprika and cumin, perfect for lunch. Under 200 calories and syn-free on Slimming World. Jump to recipe Slow cooker soup is something that I think of in Autumn and Winter, ready for all my work lunches on those cold days. However, my Leek and Potato Slow Cooker Soup recipe gets just as many repins and views during the summer as it does in the winter, and it remains one of my most popular posts. So it would seem that slow cooker soup is popular no matter the time of year or the weather! Coincidentally, today my husband requested a batch of soup ready for when he goes back to work next week, and so this recipe was born. The idea of butternut squash and pepper soup is already delicious, but add a little little cumin, smoked paprika, garlic and chilli powder to give it some punch against the sweetness and you've got a winner. I use red peppers as that's usually what I have to hand, but ...

Slow Cooker Parsnip and Ginger Soup

Image
I really like parsnips, but they only really grace my menus for Sunday lunch, roasted. I love the sweet, nutty flavour they have. Recently, we were eating at a steak restaurant and the only starter on the menu that I felt in the mood for, was parsnip soup. Three of us ended up ordering it. It was a very simple parsnip soup with a bit of cracked black pepper on the top and some garlic bread on the side. It was so good, that I could have gone home happy right then, never mind about the steak! Inspired, I bought a big bag of parnsips and set about making some kind of soup with them. Ginger is often put with carrot, another sweet vegetable, so I thought it was worth a try with parsnip. I really enjoyed the kick it gave the soup; it felt like the perfect kind of soup that would do you good if you had a cold! If you're doing Slimming World, this recipe is "syn" free if you switch ginger paste for ginger powder or fresh ginger.
