Lazy Breakfast Traybake

Image
Lazy Breakfast Traybake- an easy way to serve up an English cooked breakfast using one baking tray- sausages, potatoes, bacon, mushrooms and tomatoes. Jump to Recipe I love an English breakfast, especially at the weekend, even better if you're eating it at big family gathering. What I don't love, is all the pots and pans that need cleaning afterwards. The worst, the absolute worst, is the grill. I absolutely hate cleaning it. This lazy breakfast traybake is a winner on that front. One baking tray and you're done! Sausages (Cumberland are best by far), bacon, mushrooms, tomatoes and Cajun spiced potatoes- amazing. I like to think of the breakfast traybake as a base breakfast. Something you can build on. I will happily eat it for breakfast and not need anything else. But, if you can't imagine a cooked breakfast without beans or eggs or toast, you can easily serve those on the side as well for a really monster breakfast/brunch. The recipe as it stands, serves 4, but you ca...

Cheesy Mashed Potato and Bean Bake

Image
Cheesy Mashed Potato and Bean Bake- this dinner recipe is the ultimate filling, vegetarian, comfort food. Smoky beans in a tomato and thyme sauce, topped with cheesy mash. Jump to Recipe We've developed a real taste for different types of beans since we started 'Meat-Free Mondays' last year. Probably my favourite 'full of beans' meal is Slow Cooker Vegan Chilli but I can't eat that every week, though I could be tempted! This Cheesy Mashed Potato and Bean Bake, uses some of the same ingredients but it's much more of a comfort food dinner, a bit of a vegetarian twist on Shepherd's Pie. I use cannellini beans and kidney beans for the bean part of the bake. You could easily switch them for your own favourite- haricot, borlotti, your choice.

Garlic Chicken and Leek Potato Bake

Image
Garlic Chicken and Leek Potato Bake- a creamy, delicious garlic, chicken and leek bake with peas and potatoes layered over the top. Filling winter comfort food. Jump to Recipe We have been enjoying Salmon and Broccoli Potato Bake so much during the cold weather that I was keen to come up with a bit of a spin on the recipe. This garlic chicken and leek potato bake is the happy result of that effort. This version of the bake has chicken pieces and sliced leeks and peas in a garlicky, creamy sauce with sliced potatoes on top. It's just the right kind of recipe to feed a family on a chilly evening- It does not disappoint! You might want to serve it with some more greens on the side for bonus veg content. Broccoli or cabbage goes well. I would happily eat it in summer with a side salad too.

Salmon and Broccoli Potato Bake

Image
Salmon and Broccoli Potato Bake- salmon, broccoli and peas in a cheesy sauce and topped off with sliced potatoes. A real winter warmer for family meals. Jump to Recipe I'm always looking for good recipes to add to my winter comfort food list. If they can include some healthy elements, then so much the better. I love this Salmon and Broccoli Potato Bake because it tastes really indulgent with its creamy, cheesy sauce but it's also full of peas and broccoli, and of course salmon! It's a bit of a spin on one of my other favourite winter recipes- Beef Mince Hot Pot , which also features sliced potatoes on the top. If you're a fan of this type of dish then have a look at Garlic Chicken and Leek Potato Bake too.

Slow Cooker Bolognese and Potato Hash

Image
I spent quite a while coming up with a name for the recipe I'm sharing today- Slow Cooker Bolognese and Potato Hash. In the end my friend came up with the name, when she was visiting last weekend. What do you call something that's essentially a traditional beef bolognese made in the slow cooker with potato? We toyed with Bake, but it's not baked. She suggested hash, which resulted in some pondering about what hash means in the foodie sense. Corned Beef Hash has potato in, and is sort of thrown together, so that must work, right? Let's hope so, because that's what I've gone for! I decided to do a spin on spaghetti bolognese, because it has so much flavour. All that rich sauce- it must surely be a good idea to put potato in it? Excellent comfort food! Beef Bolognese works beautifully in the slow cooker. It allows the sauce to really develop a deep, rich flavour. What you do need to be careful of however, is how much liquid you add. It's tempting to put in as m...

Smoked Paprika Roasted New Potatoes

Image
Smoked Paprika Roasted New Potatoes- the perfect way to jazz up your next dinner. Crispy, golden, roasted new potatoes with a kick of smoked paprika. I made a big batch of my Very Garlicky Slow Cooker Lemon and Rosemary Chicken this week and was looking for something different to serve with it. I tend to stick to the same old potatoes and veg side dishes with dinner, especially during the week, and I just get very bored of them. I had new potatoes in the cupboard- the perfect summery accompaniment, but I wanted to add more flavour. The smoked paprika roasted new potatoes that I ended up making were just perfect; crispy on the outside and gorgeously fluffy on the inside, with a bang of flavour from the smoked paprika and the chilli. The best thing is that they are very easy to make, with just 5 basic ingredients and virtually no prep, so you could easily do them on weeknights to jazz up any meal. If you love easy dishes that you just throw on a baking tray- these are for you!

Slow Cooker Shoulder of Lamb

Image
Slow Cooker Lamb Shoulder- lamb, slow cooked with rosemary, thyme, garlic, potatoes and carrots until it's juicy and falling apart. A delicious alternative to your normal Sunday roast, and a lot less effort for the cook! Jump to recipe Last week, I spotted that Lamb Shoulder was on offer when I was doing my online shopping. I don't cook a lot of lamb but whenever I do eat it, I love it, so I ordered some. When it arrived, I laughed because it was such a tiny, wee cut of lamb shoulder. I had made the classic online food shopping error of not checking the weight- 400g! Oh well, it was the perfect size for two. Lamb shoulder is best slow cooked, until it's soft and juicy and can be pulled apart easily you find will talk about slow cooking it in the oven, but I always prefer the slow cooker. It's more economical and it means I can use my oven for other things at the same time as cooking the meat, if I want to. I tend not to move away from the classic complimentary flavours...

Slow Cooker Rosemary Chicken Stew

Image
Well the weather here has certainly turned. Below zero temperatures and even some of the white stuff! The change in temperature had me craving something warm and comforting, so I made a nice big batch of chicken stew in the slow cooker last week. Chicken stew is full of flavour just cooking in its own stock, but I wanted to boost that even more by adding rosemary. Chicken and rosemary are a classic flavour combination- so delicious together. The smell of the rosemary floating up the stairs, while it was cooking during the evening, was torture. I had to close all the doors to stop us from drooling! When we could finally eat it the following evening, it didn't disappoint and the rosemary flavour totally makes it, if I do say so myself! I'm sure that using the slow cooker really helps the depth of that flavour as well. I had made a great big batch, so the rest was swiftly split between plastic containers ready for lunches. I used chicken breasts for the Rosemary Chicken Stew becau...

Hearty Slow Cooker Beef and Bean Stew

Image
Hearty Slow Cooker Beef and Bean Stew- a really filling slow cooked beef stew with carrots, potato and haricot beans. Syn-free on Slimming World and just over 300 calories. Jump to recipe When you ask someone what they make in their slow cooker, invariably they say 'stew'. It's a slow cooking staple. I have made it quite rarely myself though. I think have been so determined to find other things to make in my slow cooker that I have rather neglected the humble stew! This week I decided to remedy the situation and make a Hearty Slow Cooker Beef and Bean Stew. I had a late meeting coming up and took the chance to put this stew on overnight and portion it out in the morning. It was so nice to walk through the door at 7pm and know that it only needed a quick zap in the micro and it would be ready. I call this beef and bean stew hearty because it's so filling. As you're using a cheap cut of beef and packing the stew with veg and beans, it's also very low cost to make....

Potato Salad with Bacon

Image
Potato Salad with Bacon- new potatoes mixed with bacon and spring onions and dressed with mayonnaise. A quick and easy summer side dish for your buffet or BBQ. Jump to Recipe I love potato salad, really love it, especially if it's a delicious home-made one with new potatoes. The first time I ever had potato salad, it was a packaged one from a supermarket. Inside were little cubes of almost hard potato, pieces of white onion and a very watery, acidic sauce, which I am guessing was supposed to be mayonnaise. Needless to say, I didn't like it. I was quite young at the time and it was only a few years later, in a Home Economics lesson, when I made a real potato salad for the first time, that I realised it wasn't supposed to taste like that! Last weekend I was making a buffet lunch and I wanted to pep up the side dishes a bit. I started with the Lemon and Garlic Giant Couscous Salad and then moved onto the potato salad. New potatoes, check. Spring onions, check. Mayonnaise, che...

Beef Mince Hot Pot

Image
Beef Mince Hot Pot- a twist on the traditional hot pot, very easy to make for a filling family meal. Low fat beef mince, carrots and peas topped by sliced potato. Syn-free on Slimming World. Jump to recipe Last week, I was in a real hurry to get out the door on one of the days, so I wouldn't miss my bus to work, so I didn't have time to think about what we would have for dinner. I just grabbed a pack of mince from the freezer to defrost and raced off. On the way home, I was trying hard to be inspired by something to make that was a bit different from the usual mince rcipe. So, not chilli ( chilli recipe ), not cottage pie, not lasagne or bolognese ( bolognese recipe ). I decided on a twist on the traditional hotpot. So, instead of chunks of lamb or beef, I used mince. I left the skin on the potatoes, because why not, and it turned out very well. My husband wolfed it down- there were leftovers for lunch and I would make it again! It would also freeze well, if you wanted to make ...

Cajun Chicken and Bacon Tray Bake

Image
Cajun Chicken and Bacon Traybake- a quick and easy recipe with roasted potato, red pepper and onion, perfect for quick weeknight dinners. Syn-free on Slimming World and under 500 calories. Jump to recipe The trouble with being on diet plans is that you need to be organised. No getting in from work and thinking what shall I have for dinner, I can't be bothered to cook, let's get take-away! It all needs to be thought of in advance. So, it was a bit awkward last week when we were just getting started and I found myself without any planned dinner. It needed to be quick and fit in with Slimming World for my husband's diet. And so the Cajun Chicken and Bacon tray bake was born! I love a tray bake dinner. It's so easy- chop it all up, throw it on a baking tray and hey presto! You need 2 baking trays for this recipe as the key to getting it cooked quickly is space between the different food on the tray. One baking tray is for the potatoes so they'll get nice a crispy when...
