Cheesy Mashed Potato and Bean Bake- this dinner recipe is the ultimate filling, vegetarian, comfort food. Smoky beans in a tomato and thyme sauce, topped with cheesy mash. Jump to Recipe We've developed a real taste for different types of beans since we started 'Meat-Free Mondays' last year. Probably my favourite 'full of beans' meal is Slow Cooker Vegan Chilli but I can't eat that every week, though I could be tempted! This Cheesy Mashed Potato and Bean Bake, uses some of the same ingredients but it's much more of a comfort food dinner, a bit of a vegetarian twist on Shepherd's Pie. I use cannellini beans and kidney beans for the bean part of the bake. You could easily switch them for your own favourite- haricot, borlotti, your choice.

It's such a relief that you can make BBQ meats in the slow cooker too. It doesn't matter if it rains or shines (usually rain here in the UK), the BBQ food can still go ahead. I have made BBQ Beef in the slow cooker for quite some time and, like this BBQ chicken, it's absolutely delicious in sandwiches. Pop over to the recipe and give it a try. You won't be disappointed. This BBQ chicken recipe packs a bit more punch than the beef as it has added jalapenos. If spicy, spicy isn't your thing, just leave them out and you'll get enough spice from the chilli powder. As with all slow cooker recipes, just whack everything in, leave it to cook and then all you need to do is shred the chicken and put it inside a lovely, soft roll with coleslaw, lettuce, whatever floats your boat!

Jump to Recipe We have been enjoying Salmon and Broccoli Potato Bake so much during the cold weather that I was keen to come up with a bit of a spin on the recipe.This garlic chicken and leek potato bake is the happy result of that effort. This version of the bake has chicken pieces and sliced leeks and peas in a garlicky, creamy sauce with sliced potatoes on top. It's just the right kind of recipe to feed a family on a chilly evening- It does not disappoint! You might want to serve it with some more greens on the side for bonus veg content. Broccoli or cabbage goes well. I would happily eat it in summer with a side salad too.

Courgette and Mushroom Pesto Pasta- a quick and easy pasta dinner with sauteed mushrooms, courgette and pesto. Perfect for 'Meat Free Monday' or a quick weeknight meal. While I make most meals from scratch myself, these days, there are still staple convenience items that are 'must buys' for me. A jar of pesto is absolutely one of them. Fresh home-made pesto is absolutely delicious, but when you need a quick dinner, a jar can't be beaten for speed. Unfortunately, shop-bought pesto tends to be made, as is tradition, with parmesan, so doesn't fit the vegetarian bill, if you are vegetarian for ethical reasons. There are now brands available such as Sacla Organic Vegetarian Pesto, which would make it truly vegetarian though. This pasta dish is about as quick and easy as they come. You simply need to pan fry the courgette and mushroom with some onion and garlic, cook the tagliatelle and then mix it all together along with some classic pesto. Quick, delicious and easy....

Jump to Recipe I'm always looking for good recipes to add to my winter comfort food list. If they can include some healthy elements, then so much the better. I love this Salmon and Broccoli Potato Bake because it tastes really indulgent with its creamy, cheesy sauce but it's also full of peas and broccoli, and of course salmon! It's a bit of a spin on one of my other favourite winter recipes- Beef Mince Hot Pot , which also features sliced potatoes on the top. Aubergine and Potato Curry- a spicy, tomato-based, vegan curry with aubergine, peppers and potato, very low in calories and syn free on Slimming World. It's my mission to find as many different ways to use aubergine as possible. Pretty much anything tastes better with aubergine in it, in my opinion! My other Aubergine recipes Warm Mediterranean Couscous salad with Roasted Aubergine and Feta Mediterranean Pasta Bake We are still going strong with our attempt to do a full year of Meat Free Mondays and aubergine has been a key ingredient for getting us as far as September successfully. This recipe for Aubergine and Potato Curry, is up there with my favourite spicy meals. It's absolutely packed with flavour and deliciously spicy. Of course, if you're more of a mild spice fan, just adjust the heat of the chilli powder and/or reduce the amount of fresh chilli that you use.

Pork Loin Steaks in Dijon Marinade- a recipe for pan-fried pork loin steaks in a delicious marinade of Dijon mustard, lemon juice and honey. Pork tenderloin isn't something we eat that often and I have no idea why. Probably one of those 'stuck in a rut' things. I sometimes think that online supermarket shopping encourages that, because you essentially shop from a list with no distractions. I've recently been adding pork loin steaks to our order for something different and I have wanted to find the perfect marinade for them. This Dijon mustard marinade with a touch of honey is definitely it. It's peppery, slightly acidic and slightly sweet. It's SO good and it goes perfectly with pork. You just can't beat Dijon mustard for a meat marinade.

10 Back to School Dinner Recipes- 10 recipes that are child-friendly and easy to make for weeknight dinners, including some vegan and gluten free recipes. We're headed towards Back to School season. How did that happen so quickly? At the end of July, the 6 weeks stretch out before you and then, poof, gone! I don't know about you, but I'm a big fan of meal planning most of the time. I need to be organised and be prepared for the days when I'm not going to have a lot of time to cook dinner. But, in the school holidays, I stop doing my meal planning board and fly by the seat of my pants. Sometimes, shock horror, I decide what's for dinner about 20 seconds before I make it, ha! Warm Mediterranean Couscous Salad with Roasted Aubergine and Feta is a new recipe that we have eaten regularly in the last few weeks. It is a light, summery (and vegetarian) recipe that I created to solve two problems 1) I just can't get enough of roasted aubergine and different ways to eat it 2) Britain's hottest weather since 1976 means I just can't face cooking anything heavy. I have used my favourite giant couscous yet again for this recipe, rather than the more conventional kind. It's more substantial and mixes much better with a sauce due to being naturally slippery, rather than having a rough texture. Creamy Leek Pasta- a quick creamy vegetarian pasta dish with leeks, courgettes and peas. Can be syn-free on Slimming World if you use Quark. Dinner ready in 20 minutes. It's been a while since we had anything new for our Meat Free Monday dinner, so this Vegetarian Creamy Leek Pasta was a real treat. Creamy Leek Pasta is not only creamy and deliciously tasty, but also bright and colourful with green veg amongst the pasta. Pan-fried leeks, and courgettes, plus some peas, give the creamy leek pasta its colour and fresh flavours. If you're fan of other green veg, like spring greens, you could throw that in too. The trick to making sure that the vegetables don't end up as green mush, is to fry the veg for just enough time and to cook the peas briefly so they all have enough bite to them to add interest to the pasta. Beef Chilli Hash- an easy slow cooker comfort food recipe. Classic Chilli made with big chunks of beef and slow cooked with potato chunks. A one pan, all-in-one meal. We enjoyed the last week's slow cooker bolognese hash so much, that I got thinking about what other spins I could put on that recipe. Beef chilli seemed the perfect candidate so I made Chunky Slow Cooker Beef Chilli Hash. It's a hearty, filling chilli recipe that is perfect to having cooking ready for dinner after a long day at work. I absolutely love chilli over a jacket potato, so cooking the chilli with the potato in the slow cooker just takes one step out of the process. It also means that I don't need the oven or the hob on in these warm summer temperatures. The slow cooker emits very little heat, which is why I am a big fan of using it through the summer. I spent quite a while coming up with a name for the recipe I'm sharing today- Slow Cooker Bolognese and Potato Hash. In the end my friend came up with the name, when she was visiting last weekend. What do you call something that's essentially a traditional beef bolognese made in the slow cooker with potato? We toyed with Bake, but it's not baked. She suggested hash, which resulted in some pondering about what hash means in the foodie sense. Corned Beef Hash has potato in, and is sort of thrown together, so that must work, right? Let's hope so, because that's what I've gone for! I decided to do a spin on spaghetti bolognese, because it has so much flavour. I made parsnip risotto this week, something I have been meaning to do again for quite some time. The very first time I made it, I was inspired by a Christmas meal I had in a restaurant. I didn't really like anything else that was on the menu so I ordered the parsnip risotto. I was wowed when I tried it. It had a delicious, nutty, sweet taste and was topped with parsnip crisps. Honestly the nicest risotto I had ever eaten. With our 2018 commitment to Meat Free Mondays, it seemed the perfect excuse to update the recipe. The parsnip and rosemary risotto I am sharing today, has a base of garlic and rosemary with roasted parsnip stirred through. Roasting the parsnip gives it more of a nutty taste. Lime and Ginger Cod with Giant Couscous is a recipe that I have been fiddling with for a couple of weeks. The cous cous was delicious first time, but the marinade for the cod needed some work. It was just a touch too much on the citrus side and needed a wee bit of sweetness to balance it out. I'm a huge fan of lime and ginger. It's one of my favourite flavour combinations. I have used it with turkey steaks for a long time so, one day when I was pondering how to jazz up cod fillets, I thought why not? The problem is that cod is such a delicately flavoured fish that the lime overwhelmed it a little. A teaspoon of honey did the trick and took the edge off the sharpness.
