Image
Glazed Raspberry and Lemon Muffins- These muffins are simple to make, dotted with fresh raspberries, flavoured with real lemon and glazed with a lemon glaze. A delicious breakfast treat or perfect for your next picnic! Jump to Recipe I'm a big fan of raspberries. I love their sweet, sharp zing and I'll happily sit and eat a whole punnet of them! Occasionally though, I'll have some leftover that start to go a little bit soggy. These muffins are the absolute best way to make sure those raspberries don't go to waste. The muffins are beautifully moist and have the fresh raspberries going through them, additional zing from lemon zest and a lovely lemon sugar glaze on the top. They are delicious for a breakfast treat, perfect for popping in lunchboxes and handy for a picnic. You can't really go wrong! Top Tips Don't over mix. Muffin mixture shouldn't be beautifully smooth like cake batter. It will end up tough when cooked if so. Cut up the raspberries. Whole raspb...

Sweet fruity watermelon with feta cheese, cucumber and fresh mint, drizzled with a home-made balsamic dressing. Jump to Recipe I absolutely adore watermelon. Nothing beats it for pure juiciness and it's not overwhelmingly sweet. That makes it perfect to be served with a savoury flavours. And there you have it, the perfect salad for your next BBQ or a nice lunch on a hot day; quick and easy to make.

Quick Summer Fruits Crumble

Image
Quick Summer Fruit Crumble- a quick summer dessert using blueberries, raspberries and blueberries. Serve it up with ice cream or custard. Use frozen fruit if you can't get fresh. Jump to Recipe I am so ready for Summer to come round the corner, so I can put away my winter wardrobe, plant up up my garden and start carrying my sunglasses wherever I go. I want to eat strawberries, avocados and salad and sit in the garden on sun-loungers. Doesn't seem like much to ask, but summer is being quite contrary... One of the other great things about summer is all the delicious fruit that comes into season- strawberries, blackberries, raspberries, blueberries, apricots, blackcurrants, nectarines. I love it all! We're not quite in the season for those fruits yet in the UK, although some early British strawberries are knocking around. I use the BBC Good Food Season Table to keep an eye on when I'll be able to find the fruit I want. In my determination to bring summer on, I decided to...

Home-made Strawberry Milkshake

Image
Well after weeks of complaining that summer was never coming, it hit with a vengeance in the last week! The last few days at work were sweltering. Air con is not really a feature of British primary schools, so I mostly survived by drinking iced water constantly. Now school's finished and I have total freedom to keep cool in whatever way works (lolling in front of the fan indoors, or laying out in the breezy garden have been my favourite methods so far), including making lovely summery drinks when the mood takes me. One drink I made, which really got me feeling like summer, was a home-made strawberry milkshake. The heat got me thinking of milkshakes. I like a milkshake now and then. It feels like a summery treat. I'm quite particular about them though. The milkshake has to be thick and it has to have real flavours. I absolutely hate the fake flavoured milkshakes that you get in the fast-food chains. I love strawberry but synthetic strawberry flavour is revolting. The only thing...
