Pork Loin Steaks in Dijon Marinade- a recipe for pan-fried pork loin steaks in a delicious marinade of Dijon mustard, lemon juice and honey. Pork tenderloin isn't something we eat that often and I have no idea why. Probably one of those 'stuck in a rut' things. I sometimes think that online supermarket shopping encourages that, because you essentially shop from a list with no distractions. I've recently been adding pork loin steaks to our order for something different and I have wanted to find the perfect marinade for them. This Dijon mustard marinade with a touch of honey is definitely it. It's peppery, slightly acidic and slightly sweet. It's SO good and it goes perfectly with pork. You just can't beat Dijon mustard for a meat marinade.

How did that happen so quickly? At the end of July, the 6 weeks stretch out before you and then, poof, gone! I don't know about you, but I'm a big fan of meal planning most of the time. I need to be organised and be prepared for the days when I'm not going to have a lot of time to cook dinner. But, in the school holidays, I stop doing my meal planning board and fly by the seat of my pants. Sometimes, shock horror, I decide what's for dinner about 20 seconds before I make it, ha! That just doesn't work for me during term-time though, so it's time to start preparing to be more organised. With all that in mind, I have gathered together 10 easy dinner recipes that should become staples on your back to school meal plans. Take a look!

Easy Ginger Cake

Easy Ginger Cake- a very easy recipe for ginger cake which only requires one egg. Foolproof and works every time to make soft, moist, sticky ginger loaf cake, with golden syrup. I love Ginger Cake. LOVE it. It's so sticky and delicious. It gives me fond memories of eating the Tate and Lyle Golden Syrup Cake in childhood. We would have it either as a slice to snack on after school or covered in custard for pudding. Amazing both ways. This Easy Ginger Cake is essentially the same style as that syrup cake but with added ginger. It's so light and moist, with a slightly sugary crust, that it's really hard to stop at just the one slice! You also only need one egg to make this cake which is a bonus, as I always seem to want to bake when I only have one egg. As promised, it's a very easy cake to make. You don't need any fancy cooking skills. In fact, if you've never made a cake before, this is a great one to start with.

When it's hot like this, I really struggle to think of anything that appeals to me food-wise. These quick, avocado salad pittas did the trick though. I could have eaten double the amount, easily! To make Avocado Salad Pittas, you just need avocado, cherry tomatoes, spring onions, cucumber, mayo, fresh coriander and lime juice. There's very little prep- just a bit of chopping, mix it all together and then you've got a refreshing filling for a summer lunch. Put it in pitta bread like I do or pop it on crackers, use as a crumpet topping- it's very versatile. On a cooler day, it makes a nice topping for a jacket potato too.
