Mediterranean Vegetable Pasta Bake

Mediterranean Pasta Bake- a vegetarian pasta bake, packed with veg- aubergine, pepper and courgette and then topped with cheese. Great for weeknight dinners and feeding a crowd. I just want to put them in everything!
